Vietnamese Pork Bánh mì Sandwich
Yeilds 6-8 sandwiches
Ingredients:
- 2 lbs. pork shoulder marinated in char sui
- 1 lb. bologna
- 1 lbs. ham, thinly sliced
- 1/2 lb. carrot, julienned
- 1/2 lb. daikon, julienned
- 3 tbsp. sugar
- 2 tbsp. salt
- 4 tbsp. rice vinegar
- 4 cups warm water
- 1 cup bean sprouts
- 1/2 lb. pickles, thinly sliced
- 3/4 cup sriracha mayo
- 1 cup fresh cilantro sprigs
- 2 loafs French baguette or home made bánh mì bread
Instructions
- Marinate the pork in a char sui marinade. Allow to marinate over night.
- Cook pork "low and slow" until the pork is fully cooked.
- Pickle the daikon and carrot in the salt, sugar rice vinegar in warm water over night.
- Mix the sriracha mayo by mixing sriracha sauce and mayonnaise together. Add sriacha to taste.
- Time to build your Bánh mì! Slice the bread open and spread sriracha mayo on one side of the bread.
- Pile on desired meats or other flavors to complete sandwich.
