Chipotle Smashed Sweet Potatoes
Yeilds 8-10 servings
Ingredients:
- 1 tsp. kosher salt - for boiling
- 4 lbs. sweet potatoes - peeled and diced
- 4 tbsp. butter
- 3.5 oz. chipotle pepper in adobo - minced
- 1 tsp. black pepper
Instructions
- Bring a 6 qt. sauce pan of water and salt to a boil.
- Peel and dice sweet potatoes and place then place them in the boiling water.
- Boil until they are tender, approximately 10-15 minutes.
- Once they are tender place them in a large bowl or a home counter-top mixer.
- Mince the chipotle pepper in adobo as small as you can, and remember to save the liquid.
- Add the rest of the ingredients: butter, minced chipotle peppers in adobo, salt, and black pepper.
- Mash until fully incorporated, and adjust seasoning if needed.
- Garnish with bacon or crispy shallot slivers if desired
