Chipotle Smashed Sweet Potatoes

Chipotle Smashed Sweet Potatoes

Yeilds 8-10 servings

Ingredients:

  • 1 tsp. kosher salt - for boiling
  • 4 lbs. sweet potatoes - peeled and diced
  • 4 tbsp. butter
  • 3.5 oz. chipotle pepper in adobo - minced
  • 1 tsp. black pepper

Instructions

  1. Bring a 6 qt. sauce pan of water and salt to a boil.
  2. Peel and dice sweet potatoes and place then place them in the boiling water.
  3. Boil until they are tender, approximately 10-15 minutes.
  4. Once they are tender place them in a large bowl or a home counter-top mixer.
  5. Mince the chipotle pepper in adobo as small as you can, and remember to save the liquid.
  6. Add the rest of the ingredients: butter, minced chipotle peppers in adobo, salt, and black pepper.
  7. Mash until fully incorporated, and adjust seasoning if needed.
  8. Garnish with bacon or crispy shallot slivers if desired
