Sweet Maple Winter Slaw
Yeilds 8-10 servings
Ingredients:
Dressing:
- 1/4 cup fresh lime juice
- 1 stalk lemongrass stalk, minced
- 3 tbsp. pure maple syrup
- 2 tbsp. sesame oil
- 1 tbsp. soy sauce or wheat free tamari sauce (gluten free)
- 1/2 tbsp. sambal, to taste
- 1/3 cup olive oil
Slaw:
- 1/4 head red cabbage
- 1/4 head green cabbage
- 2 lbs. mango, diced
- 1 red bell pepper, diced
- 2 stalks scallions, diced
- 1/4 cup fresh mint, chiffonade
- 1/4 cup basil, chiffonade
- 1/4 cup cilantro, chiffonade
- 2 tbsp. sunflower seeds, toasted
Instructions
- Create the dressing by whisking together all dressing ingredients except the olive oil
- Slowly add the olive oil while whisking dressing, set aside
- Blend the cabbage, mango, bell pepper, scallions, mint, basil, and cilantro in a medium size bowl
- Drizzle dressing on top of mixture
