Vietnamese Banh Mi Sandwich

Vietnamese Pork Bánh mì Sandwich

Yeilds 6-8 sandwiches

Ingredients:

  • 2 lbs. pork shoulder marinated in char sui
  • 1 lb. bologna
  • 1 lbs. ham, thinly sliced
  • 1/2 lb. carrot, julienned
  • 1/2 lb. daikon, julienned
  • 3 tbsp. sugar
  • 2 tbsp. salt
  • 4 tbsp. rice vinegar
  • 4 cups warm water
  • 1 cup bean sprouts
  • 1/2 lb. pickles, thinly sliced
  • 3/4 cup sriracha mayo
  • 1 cup fresh cilantro sprigs
  • 2 loafs French baguette or home made bánh mì bread

Instructions

  1. Marinate the pork in a char sui marinade. Allow to marinate over night.
  2. Cook pork "low and slow" until the pork is fully cooked.
  3. Pickle the daikon and carrot in the salt, sugar rice vinegar in warm water over night.
  4. Mix the sriracha mayo by mixing sriracha sauce and mayonnaise together. Add sriacha to taste.
  5. Time to build your Bánh mì! Slice the bread open and spread sriracha mayo on one side of the bread.
  6. Pile on desired meats or other flavors to complete sandwich.
