Sweet Maple Winter Slaw

Yeilds 8-10 servings

Ingredients:

Dressing:

  • 1/4 cup fresh lime juice
  • 1 stalk lemongrass stalk, minced
  • 3 tbsp. pure maple syrup
  • 2 tbsp. sesame oil
  • 1 tbsp. soy sauce or wheat free tamari sauce (gluten free)
  • 1/2 tbsp. sambal, to taste
  • 1/3 cup olive oil

Slaw:

  • 1/4 head red cabbage
  • 1/4 head green cabbage
  • 2 lbs. mango, diced
  • 1 red bell pepper, diced
  • 2 stalks scallions, diced
  • 1/4 cup fresh mint, chiffonade
  • 1/4 cup basil, chiffonade
  • 1/4 cup cilantro, chiffonade
  • 2 tbsp. sunflower seeds, toasted

Instructions

  1. Create the dressing by whisking together all dressing ingredients except the olive oil
  2. Slowly add the olive oil while whisking dressing, set aside
  3. Blend the cabbage, mango, bell pepper, scallions, mint, basil, and cilantro in a medium size bowl
  4. Drizzle dressing on top of mixture
